A street treat from Colombia’s coastal towns, cocada is made by briefly simmering grated coconut with condensed milk and sugar, then baking the mixture in small mounds. The cookies are lightly crisp outside and soft inside, and travel well in a picnic basket.

How to make it?

Simmer the mixture

Put the grated coconut, condensed milk, sugar, cinnamon, and salt in a saucepan. Bring to a boil and cook for 8 minutes, stirring constantly.

Cool

Remove the mixture from the heat and let it cool for 5 minutes.

Shape and bake

Spoon the mixture into small mounds and arrange them on a parchment-lined baking sheet. Bake in a preheated 170°C / 340°F oven for 12 minutes, until the edges are lightly golden.

Reminder

Let the mixture cool for 5 minutes before baking so the mounds hold their shape. Contains dairy (condensed milk).

8 dakikalık kaynatma sırasında sürekli karıştırmadığım için dibi biraz tuttu, yine de tepecikler fırında 12 dakikada güzel şekillendi. Bir dahaki sefere ocağı biraz daha kısarım.
