These egg cups are seasoned with ají, a spicy green sauce from Colombian cuisine, and made by baking grated potato, egg, and fresh cilantro in small oven-safe dishes. This easy, freezer-friendly snack uses little oil and is ready to serve at a gathering.

Prepare the Mixture

Whisk the grated potato, egg, fresh cilantro, scallions, green chili pepper, lemon juice, salt, and black pepper together in a bowl.

Divide into Ramekins

Divide the mixture among small greased oven-safe dishes.

Bake

20 min

Bake in an oven preheated to 190°C / 375°F for 20 minutes, until lightly puffed and colored on top.

Reminder

Squeeze the water from the grated potato; otherwise, the mixture may become watery and fall apart in the baking dishes. Allergen: contains eggs.

Yeşil acı biber bulamadığım için az miktarda hazır acı sos kullandım, ají'nin o taze otsu tadını tam yakalayamadım ama yeterince acı oldu. Patatesin suyunu iyice sıkmak gerçekten fark yaratıyor, benimkiler dağılmadı.
