Mora preserves are made by simmering moras, a type of blackberry grown in Colombia, with sugar for a long time, then straining the mixture until thick and seedless. The extended cooking and straining make the preserves thick enough to stay on a spoon.

Step by Step

How to make it?

1

Prepare the blackberries

10 min

Sort and wash the blackberries, then crush them coarsely.

2

Simmer the berries

45 min

Cook the crushed blackberries with the sugar and lemon juice over low heat, stirring constantly, for 45 minutes, until the mixture thickens.

3

Strain and thicken

15 min

Pass the mixture through a fine strainer to remove the seeds. Return the thick strained mixture to the pot and cook for 15 more minutes to thicken it further.

4

Fill the jars

30 min

Fill jars with the preserves and let them cool.

Reminder

When straining the mixture, press it with the back of a spoon to extract all the juice; otherwise, the preserves may be too runny. Stir often as they cook so they do not stick to the bottom of the pot.
