This fruit drink is made by simmering Cornelian cherries with sugar and straining them. Known for its intensely tart flavor, it can be served hot in winter or chilled over ice in summer.
Add the Cornelian cherries and water to a pot. Simmer over medium heat until the skins split.
Gently mash the cherries with the back of a spoon to release their juice, then strain to remove the pulp.
Gradually add sugar to the strained juice to taste, stirring as you go. Heat gently until the sugar dissolves.
Serve hot, or chill in the refrigerator and serve over plenty of ice.
Caution: Cornelian cherries are very tart, so add the sugar gradually and taste as you go; adding too much at once can throw off the flavor.
