Put the cracked olives in a container with plenty of water and begin soaking them. Change the water at regular intervals to draw out the bitterness.
Drain the olives and replace the water with fresh water. Repeat once per day until the bitterness is gone.
Drain the olives once the bitterness is gone and put them in a jar. Pour over the water mixed with salt, lemon slices, garlic, and thyme. Cover the surface with olive oil and seal the jar.
When cracking the olives, try to split each pit down the middle; otherwise, the bitterness may not leach evenly and some olives can remain bitter.
