A snack made by steaming cauliflower florets until tender, coating them with breadcrumbs and cheese, and baking until crisp. The vegetable is visible rather than grated and hidden; the crunchy coating stays on the outside. A brief steaming step lets the centers soften before the coating browns in the oven.

Steam the cauliflower

Break the cauliflower into florets no more than 3 cm along their longest side; this size works for a child to hold and bite. Add 500 ml water to a pot and bring it to a boil. Set a steamer basket over the water, add the florets, and steam for 5 minutes. The florets are ready when a fork goes 3–4 mm into one from the outside while it still holds its shape. If it falls apart, it has steamed too long.

Dry the florets and prepare the coating

Arrange the florets in a single layer on a wide tray and leave them uncovered for 5 minutes to let surface moisture evaporate. Meanwhile, set out three bowls: put the flour and sweet paprika in the first, the beaten egg and milk in the second, and the breadcrumbs mixed with grated kashar cheese in the third. Add half the salt to the flour and the other half to the breadcrumb mixture.

Coat the florets

Dredge each floret in flour and shake off the excess, dip it in the egg and let the excess drip off, then turn it in the breadcrumb mixture, pressing to coat. The coating has adhered when it does not fall off under a light touch. Arrange the pieces on a parchment-lined baking sheet without letting them touch, then drizzle the olive oil over them in a thin stream.

Bake until crisp

Bake on the middle rack of an oven preheated to 200°C / 390°F for 25 minutes. At the fifteenth minute, take out the tray and turn the pieces with tongs. Remove them when the coating is a shade darker than golden and the edges are browned, and a fork slides into the stems without resistance.

Cool slightly and serve

Transfer the pieces to a wire rack and let them cool for 3–4 minutes; the hot coating can burn the mouth, while coating left on a plate softens in the steam from the tray. Cut one piece in half to check that the center is tender, then serve it on the child’s plate.

Reminder

If you coat the cauliflower raw without steaming it first, the centers may stay firm until the coating browns, making the pieces hard for a young child to chew. Space the coated pieces apart on the tray; pieces that overlap trap steam between them and will not crisp on those sides.
