Cut the bananas into thick slices.
Dip the slices in beaten egg, then coat them in whole-wheat breadcrumbs.
Bake the slices in an oven preheated to 190°C / 375°F for 12 minutes, until golden. Sprinkle with cinnamon and serve.
Choose bananas that are ripe but still firm; very ripe bananas may fall apart when sliced. Allergens: contains gluten (breadcrumbs) and eggs.
