This plum cake gets its moisture and purple streaks from damson plums baked into the batter. The plums’ skins contain concentrated pigments that color the cake as it bakes; other plum varieties turn the cake yellow rather than purple. Halve the plums instead of chopping them: small pieces release all their juice and make the batter soggy.

Prepare the plums

Wash and dry the plums. Cut around each one with a knife, remove the pit, and leave the halves intact. Do not chop them; small pieces break down in the oven and release all their juice, making the batter soggy. Arrange the halves on a plate, cut side up.

Beat the eggs and sugar

Beat the eggs and sugar together for 5 minutes, until pale and doubled in volume.

Add the oil and yogurt

Pour in the oil in a thin stream while mixing, then add the yogurt and beat for another 30 seconds.

Add the flour

Sift in the flour and baking powder and fold with a spatula until no dry flour remains. The batter should be fairly thick; the plums will release juice and loosen it.

Pour into the pan and arrange the plums

Pour the batter into a greased and floured pan and smooth the top. Set the plum halves on the batter, cut side down, without pressing them in; with the cut side down, their juice runs into the batter and creates purple streaks.

Bake

Bake in an oven preheated to 175°C / 345°F for 45 minutes. The cake is done when the plums are puffed, their edges have darkened, and a toothpick inserted between two plums comes out clean. Let it rest in the pan for 30 minutes; removing it while hot may split the cake in half.

Reminder

Let the cake cool in the pan for at least 30 minutes, then cool it on a wire rack for 1 hour. These times are not included in the recipe duration. The cake is very moist while hot and will fall apart if sliced too soon.

Erikleri üstüne dizmek yerine hamura karıştırdım, hepsi dibe çöktü. Tarifteki gibi üste dizmek daha doğru. Erikleri çekirdeğinden ayırıp yarım bıraktım, dörde bölünce hamurun içinde dağılıp keki mora boyuyor.
