A specialty of Kayseri cuisine, this dessert is made from yeasted dough shaped like dates, fried in hot oil, and dipped in syrup. It has a light interior and a syrup-soaked exterior.
Stir the fresh yeast and sugar into the lukewarm water. Cover and let it stand for 10 minutes.
Add the flour and salt and knead into a soft dough. Cover and let it proof for 20 minutes.
Bring the sugar and water to a boil. Add the lemon juice and boil for 5 minutes, then let the syrup cool.
Pinch off pieces of dough and shape them into elongated date-like forms. Fry in hot oil until golden.
Dip the hot fried pastries in the cold syrup and let them absorb it well.
Important: Dip the pastries in cold syrup while they are hot, or in hot syrup if they have cooled; otherwise, they will not absorb the syrup fully. Allergens: Contains wheat (gluten).
