A breakfast staple in Minas Gerais, this Brazilian doce de leite spread is made by slowly cooking milk and sugar together until caramelized. It requires constant attention and careful heat control to reach the right thickness without burning.
Combine the milk and sugar in a wide, heavy-bottomed saucepan. Bring to a simmer over medium heat, stirring occasionally, for 20 minutes.
Reduce the heat to low and cook for 70 minutes, stirring often to keep the mixture from sticking to the bottom of the pan, until it is a deep caramel color.
Remove from the heat and stir in the vanilla. Stir for 2 minutes more, then pour into sterilized jars while hot.
Do not leave the mixture unattended, even for a few minutes. If it sticks to the bottom of the pan and burns, the entire spread will taste bitter and cannot be saved. Contains dairy.
