The key to this dish is the pilaf: cook the buttered rice so the grains stay separate, then make the doner at home by marinating thinly sliced meat and searing it in batches in a hot skillet. Arrange the meat over the pilaf. Spoon the hot tomato sauce around the edge of the plate rather than over the meat, or the rice will get soggy. Cook the meat in small batches; an overcrowded skillet steams it instead of searing it.

Slice and marinate the meat

Slice the partially frozen meat across the grain into 2–3 mm pieces. Grate the onion and squeeze it through cheesecloth. Whisk its juice with the yogurt, olive oil, thyme, salt, and black pepper. Coat the slices in the marinade one at a time and place them in a covered container.

Cook the pilaf

Melt the butter in a pot and toast the drained rice for 3 minutes. Add the hot meat broth and salt, using a volume ratio of one measure of rice to one and a half measures of liquid. Once it boils, lower the heat, cover, and cook for 12–15 minutes, until the liquid is absorbed.

Cook the tomato sauce

Cook the grated tomato in a small skillet for 6–7 minutes, until it thickens and oil rises to the surface.

Sear the meat

Heat a cast-iron skillet until very hot. Sear the slices in small batches for 2–3 minutes, without covering the bottom of the pan. The liquid should evaporate and the edges should brown, with no pink remaining when cut; the thin marinated meat should reach an internal temperature of 71°C / 160°F.

Assemble the plate

Fluff the rested pilaf with a fork and place it in the center of a plate. Arrange the seared meat on top and spoon the tomato sauce around the edge.

Firm the meat in the freezer for 45 minutes before slicing, marinate it in the refrigerator for at least 2 hours, and let the cooked pilaf rest for 10 minutes with a cloth under the lid.
