Chop and flour the apricots

Chop the dried apricots into pea-sized pieces; kitchen scissors are easier than a knife and keep the pieces from sticking together. Put them in a bowl, sprinkle two 15 ml measures of the flour from the recipe over them, and toss until every piece is coated. Apricots that are not floured will sink to the bottom of the cake in the oven.

Beat the eggs and sugar

Beat the eggs and sugar for 5 minutes, until the mixture is pale and has doubled in volume.

Add the yogurt and oil

Add the yogurt, oil, and orange zest. Mix on low speed for 1 minute.

Add the flour

Fold in the apricots and pour into the pan

Bake the cake

Bake in an oven preheated to 175°C / 345°F for 45 minutes. Do not open the oven door during the first 25 minutes. The cake is done when the top is golden and a toothpick inserted into the center comes out clean. Let it rest in the pan for 10 minutes, then transfer it to a wire rack.

Reminder

Let the cake cool on a wire rack for at least 1 hour; this time is not included in the recipe’s listed times. If you slice it while warm, the apricot pieces will stick to the knife and the slices may fall apart.
