An Argentine classic, dulce de batata is made by boiling and mashing sweet potatoes, then cooking them with sugar until thick. Often served with cheese, it also makes a filling late-night snack.
Boil the chopped sweet potato in water for twenty minutes, until tender.
Mash the cooked sweet potato until smooth.
Boil the mash with the sugar, water, cinnamon stick and lemon juice, stirring frequently, for 45 minutes until thick.
Remove the cinnamon stick and fill the jars with the hot mixture.
Stir continuously as it boils. If it sticks to the bottom, the burnt flavor will spread through the entire confection.
