A Vienna workers’ lunch: potatoes with no meat, lots of onion, and plenty of paprika. It gets its thick consistency not from flour or tomato paste but from the starch of the potatoes as they break down during cooking. That is why the potatoes are cut into neat cubes before cooking, while some are allowed to fall apart. Stir the paprika in after taking the pot off the heat; paprika that burns in hot oil leaves an irreversibly smoky taste.

How to make it?

Finely chop the onion and cut the potatoes into large pieces

Finely chop the onions; large pieces will not melt into the stew and will remain distinct. Peel the potatoes and cut them into neat 3 cm cubes. Do not put them in cold water; the starch on their surface thickens the stew. Crush the garlic.

Cook the onion until soft

Heat the oil in a pot and cook the onion over low heat, stirring occasionally. It should soften completely, shrink to one-third of its volume, and turn into a soft paste without browning. This 18-minute step builds the stew’s sweetness.

Add the paprika off the heat

Remove the pot from the heat and stir the sweet and hot paprika, cumin seeds, and marjoram into the oil; it will turn dark red immediately. Wait 30 seconds before returning the pot to the heat.

Add the vinegar and liquid

Pour in the apple cider vinegar and simmer for 1 minute, scraping the browned bits from the bottom with a wooden spoon so the sharp vinegar aroma cooks off. Add the vegetable broth, crushed garlic, bay leaf, and salt, then return the pot to the stove and bring it to a boil.

Cook the potatoes and adjust the consistency

Add the potato cubes, partially cover the pot, and simmer over low heat. Near the end, use the back of a ladle to press about one-quarter of the cubes against the side of the pot and mash them; this thickens the stew. A path drawn through the middle with a spoon should remain open briefly.

Finish with black pepper and parsley

Remove the bay leaf, grind in the black pepper, and stir in the chopped parsley. Taste and adjust the salt. Let rest covered, then serve hot with bread or Semmelknödel.

Reminder

After removing the stew from the heat, let it rest covered for 15 minutes. The potatoes will continue absorbing liquid and reach the right consistency instead of looking watery on the plate.
