This famous thin Kayseri-style baked flatbread is made with unleavened dough rolled thin, topped with spiced ground meat, and baked at high heat to mimic a stone oven. Rolling the dough paper-thin is the most challenging step and takes skill.
Knead the flour with lukewarm water until a smooth dough forms.
Cover the dough and let it rest for 20 minutes.
Mix the ground beef with the chopped tomato, pepper, Turkish red pepper flakes, and cumin.
Dust the dough with flour and roll it out paper-thin, until you can see your hand through it. This step takes skill.
Spread a thin layer of the topping over the rolled-out dough. Bake in an oven preheated to 250°C / 480°F for 15 minutes.
If the dough tears while rolling it out, patch it right away, then gently pull the edges to smooth it out. Allergen: contains gluten (flour).
