Faloodeh is one of Iran’s oldest chilled desserts, made by freezing fine rice noodles in a sweet rose water syrup and serving it ice-cold. It contains no nuts, making it a suitable option for people with nut allergies.

Boil the rice noodles in boiling water for 3 minutes, then drain and rinse with cold water.
Stir the drained noodles into the rose water syrup and pour the mixture into a wide dish. Freeze for 4 hours, stirring with a fork every hour.
Drain the noodles thoroughly before adding them to the syrup; excess water will dilute it. Stir with a fork every so often while freezing, or the mixture will freeze into one solid block. Allergen note: this recipe contains none of the major allergens.
