This hearty Italian-style side dish is made by quickly cooking whole-grain farro in a pressure cooker, then tossing it with leftover grilled vegetables, olive oil, and lemon. Using whole grains and leftover ingredients makes this a practical choice.

Step by Step

How to make it?

1

Cook the Farro in the Pressure Cooker

15 min

Place the farro and water in the pressure cooker and close the lid. Once the cooker reaches pressure, cook over low heat for 15 minutes.

2

Release the Pressure

10 min

Turn off the heat and wait 10 minutes for the pressure to release naturally.

3

Toss with the Vegetables

5 min

Drain the cooked farro and toss it in a bowl with the leftover grilled vegetables.

4

Dress and Serve

5 min

Add the olive oil, lemon juice, basil, and salt. Toss and serve.

Reminder

Never force the pressure cooker to release pressure; wait for it to release naturally. Farro can turn mushy if overcooked, so do not exceed the cooking time.
