Toast the Noodles
10 minToast the noodles in olive oil, stirring constantly, for 10 minutes, until golden brown.
Fideo seco, a home-style Mexican toasted noodle dish, is made by browning noodles in olive oil and cooking them in tomato sauce until the liquid is absorbed. It takes care to toast the noodles just right without burning them.
Toast the noodles in olive oil, stirring constantly, for 10 minutes, until golden brown.
Blend the tomatoes, onion, and garlic cloves until smooth.
Pour the sauce over the toasted noodles along with the tomato paste, water, and salt. Stir to combine.
Cover and cook over low heat for 20 minutes, until the noodles have absorbed the liquid.
Remove from the heat and let stand for 5 minutes. Serve hot.
Watch the noodles closely while toasting; a few seconds of inattention can leave them burnt and bitter. Allergen: contains wheat (gluten).
