Mash the Bananas
8 minUse a fork or blender to puree the leftover ripe bananas until smooth.
This Filipino sauce makes use of leftover ripe, soft bananas. Banana puree is simmered with vinegar, sugar, and spices until thick. It takes patience to reach the right consistency and is a classic accompaniment for grilled food and picnics.

In a pot, combine the banana puree, water, vinegar, tomato paste, granulated sugar, salt, cinnamon, and cloves. Simmer over low heat for 25 minutes, stirring.
Strain the mixture to remove fibrous pieces. Return it to the heat and simmer for 10 more minutes, until it reaches the desired consistency. This step takes care, since the sauce can easily stick and burn.
Pour the hot sauce into a clean bottle and let cool.
Stir the sauce constantly as it thickens; if it sticks to the bottom of the pot, a burnt flavor will spread throughout.
Tarifte yazan 25 dakikalık kaynatma bende hiç yetmedi, sos hâlâ oldukça akışkandı; 10 dakika daha kaynattıktan sonra ancak kaşığın arkasını kaplayacak kıvama geldi, sabırla beklemeye değdi.
Bahçede akşam mangal yaparken bu sosu yanında sunduğumda herkes tarifini sordu, özellikle karanfilin verdiği hafif baharatlı koku ve kıvamı çok beğenildi, kavanozu aynı akşam tamamen bitirdik.
