Fish and seafood
Leftover boiled fish from the night before is mixed with potato, coated in breadcrumbs and fried to make these practical, waste-saving lunch patties. Crisp outside and soft inside, they remain delicious even when cold.
Thoroughly work the boiled fish together with the mashed potato, egg, parsley, flour and salt.
Shape small patties from the mixture and coat in breadcrumbs.
Heat the oil over medium heat and fry the patties for 15 minutes, until golden on all sides. Transfer to paper towels.
Remove all the fish bones carefully; even a small missed bone will be unpleasant when eating the croquettes. Allergens: contains fish, gluten (breadcrumbs and flour) and egg.
