These Colombian coastal-style fish empanadas are made with a dough of whole-grain cornmeal, filled with tuna and vegetables, and baked. Baking instead of frying gives them a crisp texture with less oil.

Cover the dough with plastic wrap and let it rest for 10 minutes.
Sauté the onion, red pepper, and tomato in olive oil for 8 minutes, until softened. Add the drained tuna and stir for 2 more minutes.
Roll the dough into small rounds. Place some filling in the center of each, fold into a half-moon shape, and seal the edges firmly.
Brush the empanadas with beaten egg and bake in an oven preheated to 200°C / 390°F for 25 minutes, until golden.
