Slice the plantains

A staple of Jamaican cooking, fried plantains are made in an air fryer here rather than deep-fried. Cutting the slices thinly and evenly is the key to crispness. Finished with cinnamon and lemon, the result is heart-friendly and can be stored in the freezer.
Peel the plantains and cut diagonally into slices about 1 cm thick.
Arrange the slices in a single layer in the air fryer basket and drizzle with olive oil. Cook for 10 minutes, turning halfway through.
Sprinkle with cinnamon, drizzle with lemon juice and serve hot.
Cut the slices to an even thickness, or the thin ones will burn while the thick ones stay raw. To freeze leftover uncooked slices, arrange them in a single layer in the freezer, then bag them once frozen.
