This version of Japanese gari lightly roasts thin slices of fresh ginger in the air fryer before marinating them in a sweet-and-sour rice vinegar syrup. Serve as a refreshing accompaniment to sushi and seafood.
Peel the fresh ginger roots and slice paper-thin along the grain. Sprinkle with a pinch of salt.
Arrange the slices in a single layer in the air-fryer basket and roast briefly, until the edges start to curl.
Bring the water, rice vinegar, sugar and salt to a boil in a saucepan, stirring until the sugar dissolves.
Add the roasted ginger slices to the hot syrup, transfer to a jar and refrigerate for at least 24 hours.
Use a sharp knife or mandoline to cut the ginger into paper-thin slices. Thick slices will not soften enough. Let the syrup cool completely before closing the jar, or steam will collect beneath the lid.
