This Georgian sweet is made by thickening leftover grape must from the harvest with flour, repeatedly dipping strings of walnuts in it, and letting them dry. It takes patient work over several days.

How to make it?

String the walnuts

Use a needle to string the walnut halves one after another on a thread, forming strings 20 centimeters long.

Thicken the grape must

Mix the grape must with the flour and simmer over low heat for 20 minutes, stirring to prevent lumps, until thickened.

Dip the walnut strings

15 min

Dip the walnut strings into the thickened grape must and hang them up. Repeat the dipping process 3–4 more times until they dry and firm up. This step takes care; dipping again before each layer is fully dry can make the grape must run and ruin the shape.

Leave to dry

After the final layer, hang the churchkhela in a cool, well-ventilated place to dry for several days.

Reminder

When dipping the walnuts in the grape must, wait for each layer to dry completely; otherwise, the sugar will run and ruin the shape. Allergens: Contains wheat (gluten) and tree nuts (walnuts).

Tarifte belirtilen 20 dakikalık kaynatma bende hiç yeterli olmadı, şıra hâlâ oldukça akışkandı; 10 dakika daha kaynattıktan sonra kaşığın arkasını kaplayacak kıvama geldi, ceviz zincirlerini ancak o zaman batırabildim.

Ceviz yerine kavrulmamış fındık kullansam ipe dizerken kırılma riski daha mı fazla olur, yoksa şıraya batırılınca aynı sağlamlıkta mı kalır, merak ediyorum çünkü fındık cevizden daha kırılgan geliyor bana.

Fındık gerçekten biraz daha kırılgan olabilir ama ipe dizerken dikkatli olursanız sorun çıkmaz, şıraya batırılınca ikisi de benzer sağlamlıkta kalıyor.

Dondurulmuş şıra genelde tazesi kadar iyi koyulaşır, tat farkı da çok belirgin olmaz; yalnız çözününce iyice karıştırmanız gerekir, aksi hâlde un topaklanabilir.
