A favorite at celebratory Iraqi breakfasts, geymar is made by slowly heating whole milk and collecting the cream that rises to the surface. Drizzled with date molasses, this clotted cream dessert can be prepared in a large tray for a crowd.

How to make it?

Heat the milk slowly

Slowly heat the whole milk in a wide pot over the lowest heat for 30 minutes without stirring; a thick skin will begin to form on the surface.

Collect the kaymak

5 min

Remove the pot from the heat and add the clotted cream starter culture. Gently shake the pot and let it cool for 5 minutes, then use a wide spoon to collect the thick skin from the surface.

Serve

3 min

Spread the collected cream in a wide tray, drizzle date molasses over it, and serve.

Reminder

Do not stir the milk with a spoon as it heats, or you will break the skin forming on the surface; gently shaking the pot is enough. Allergen: contains milk and dairy products.
