Ghapama is a festive Armenian dish made by stuffing a whole pumpkin with rice, dried apricots, raisins, and walnuts, then baking it. Sweet and savory, it is often served at holiday gatherings.

Mix the rice, dried apricots, raisins, walnuts, honey, half of the melted butter, cinnamon, and salt in a bowl.
Spoon the filling into the pumpkin. Drizzle the remaining butter over it, then replace the pumpkin lid.
Set the pumpkin upright in a baking dish. Bake in a preheated 180°C / 355°F oven for 1.5 hours, until the pumpkin and filling are completely tender.
Let the pumpkin rest for 10 minutes after baking, then cut it into slices. Each slice should include both pumpkin and filling.
Store covered in the refrigerator for up to 3 days. To reheat, cover and warm in a 150°C / 300°F oven; a microwave may soften the pumpkin skin. Allergens: contains milk (butter) and walnuts. Check packaged products for other allergens.
