Gilik is an Erzurum bread made from yeasted dough shaped into thick rings and baked with plenty of butter. Unlike külünçe, another local bread, it is ring-shaped rather than flat and contains butter instead of mahleb. Butter is kneaded into the dough and brushed on top. Because gilik is eaten with cheese at the breakfast table, it is only lightly sweetened and rich in butter.

Knead the dough

Dissolve the yeast and sugar in the lukewarm milk and wait 5 minutes for it to foam. Add the melted, cooled butter, egg, salt and flour, then knead for 10 minutes. Stretch a piece of dough between your fingers; if it forms a thin membrane without tearing, the gluten is developed. Cover and leave in a warm place to proof.

Shape the rings

15 min

Turn the risen dough onto the counter without deflating it and divide it into 16 equal pieces. Roll each piece under your palm into a thick strip 20 cm long. Join the ends and press the overlap against the counter to seal it. Leave an opening about two fingers wide in the center; a narrower opening will close in the oven.

Prepare the topping

Arrange the rings with space between them on a parchment-lined baking sheet. Brush with beaten egg yolk and sprinkle with sesame seeds and nigella seeds. Cover and leave for the second proof; the rings are ready for the oven when visibly puffed.

Bake

25 min

Bake in an oven preheated to 190°C / 375°F for 25 minutes. They are done when the tops are deep golden and the bottoms sound hollow when tapped with a finger. Transfer from the baking sheet, cover with a clean towel and let cool until warm. Covered gilik stays soft; uncovered bread develops a crust.

Reminder

Let the dough proof for about 1 hour, until doubled in size, then proof for another 25 minutes on the baking sheet after shaping. These times are not included in the recipe duration. If you skip the second proof, the rings will split in the oven.
