Giouvetsi is a Greek baked casserole made by cooking lamb cubes in tomato sauce scented with cinnamon and bay leaf, then adding orzo. Served without cheese, this version contains no dairy.

How to make it?

Brown the lamb

Heat the olive oil in a large pot and brown the lamb cubes on all sides for 15 minutes.

Make the sauce

10 min

Add the onion and crushed garlic cloves and sauté until softened. Add the grated tomatoes, cinnamon stick, bay leaf, and hot broth, then simmer for 10 minutes.

Add the orzo and transfer to a baking dish

Stir the orzo, salt, and black pepper into the boiling sauce, then transfer to a baking dish.

Bake

20 min

Cover the dish with foil and bake in an oven preheated to 190°C / 375°F for 20 minutes, until the orzo absorbs the liquid. Remove the cinnamon stick before serving.

Reminder

Make sure the sauce is boiling before putting it in the oven; warm sauce will keep the orzo from cooking evenly. Allergen: contains wheat (gluten).
