Gizzada, also called a “pinch-me-round,” is a small tartlet. Its pastry edge is pinched by hand into a wavy ring, with a filling of coconut cooked with ginger, nutmeg, and brown sugar in the center. The filling is syrupy and textured, not dry like a cookie. Jamaican toto is a cake, while Colombian cocada is a cookie with no pastry shell; the hand-shaped crust is what sets gizzada apart.

Make the pastry

Mix the flour and salt. Rub the cubed cold butter into the flour with your fingertips until the mixture resembles coarse breadcrumbs, with chickpea-size pieces of butter remaining. Add the ice water a little at a time and mix just until the dough barely comes together; do not knead. Press it into a disk, wrap it in plastic wrap, and refrigerate.

Cook the filling

Bring the brown sugar, water, cinnamon stick, and grated ginger to a boil in a saucepan. Once the sugar dissolves, add the coconut, nutmeg, and salt. Cook over medium-low heat for 12 minutes, stirring occasionally. The filling is ready when a trail drawn across the bottom of the pan with a spoon stays open for two seconds. Stir in the vanilla after removing the pan from the heat. Remove the cinnamon stick and let the filling cool until lukewarm.

Shape the pastry shells

On a floured surface, roll the dough 3 mm thick and cut out 12 circles, each 10 cm across. Pinch all the way around the edge of each circle at 1 cm intervals between your thumb and forefinger, forming a wavy ring. Leave a flat 6 cm center and a 1.5 cm-high rim. Arrange the shells on a parchment-lined baking sheet.

Fill and bake

Heap the lukewarm filling into the shells and smooth the tops with the back of a spoon. Bake in an oven preheated to 180°C / 355°F for 25 minutes. Remove them when the edges are golden brown and the bottoms look dry when lifted. Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely; the bottoms will break if lifted while hot.

Reminder

After mixing the dough, chill it in the refrigerator for at least 30 minutes; warm butter pastry tears when rolled and its edges slump in the oven. Let the filling cool as well before using it; hot filling melts the fat in the pastry and makes the bottom soggy.
