Greek ibrik coffee is a traditional drink made by slowly simmering finely ground coffee with sugar in a copper pot until a thick foam forms on top. Bringing it close to a boil without letting it spill over or lose its foam takes practice. Divide the foam evenly among the cups, then let the grounds settle before drinking.
Add the finely ground coffee, granulated sugar, and cold water to the pot and stir.
Set the pot over the lowest heat and do not stir. When the foam starts to rise, briefly lift the pot off the heat. Continue heating slowly for 10 minutes.
Use a spoon to divide the foam evenly among the cups first, then slowly pour the coffee over it.
Let the coffee rest for 3 minutes before drinking so the grounds can settle to the bottom.
Watch the pot closely and briefly lift it off the heat as the coffee approaches a boil; otherwise, it may boil over and lose most of its foam.
