Inspired by winter markets in Greece, this hot drink is made by roasting and peeling chestnuts in an air fryer, then simmering them in water with a cinnamon stick and sweetening the infusion with honey. It brings the traditional custom of roasting chestnuts over a brazier into the home kitchen.

Step by Step

How to make it?

1

Roast the chestnuts

15 min

Spread the scored chestnuts in the air fryer basket and roast at 200°C / 390°F for 15 minutes, until the shells split. If you do not have an air fryer, roast them in an oven preheated to 200°C / 390°F for the same amount of time.

2

Peel and simmer

15 min

Peel the roasted chestnuts while they are still hot. Put them in a saucepan with the water, add the cinnamon stick and simmer over low heat for 15 minutes.

3

Sweeten and serve

3 min

Remove the cinnamon stick, stir in the honey and serve hot.

Reminder

Score the chestnut shells before roasting, or they may burst in the air fryer.
