A springtime Lebanese dessert, green almond preserves are made by simmering almonds before their shells harden in a rose-scented syrup. Using erythritol instead of traditional sugar makes this a diabetes-friendly sweet for the table.

How to make it?

Boil the almonds

20 min

Cover the green almonds with water and boil for 10 minutes. Drain them, cover with fresh water, and boil for another 10 minutes.

Make the syrup

10 min

Mix the erythritol with water and lemon juice. Bring to a boil to make a clear syrup.

Simmer together

10 min

Add the boiled almonds and cinnamon stick to the syrup and simmer for another 10 minutes, until thickened.

Add the rose water

3 min

Remove the pot from the heat, add the rose water, stir, and transfer to jars.

Reminder

The bitterness will not go away unless you change the almonds’ water, so do not skip this step. Contains tree nuts (almonds).

Eritritol yerine normal toz şeker kullansam kıvamı çok mu bozulur, yoksa aynı sürede yine de güzel bir kıvam alır mıyım acaba? Diyabetim yok ama elimde hiç eritritol kalmamıştı da bu yüzden soruyorum.

Tarifte badem haşlamak için toplam 20 dakika yazıyordu, ama bademlerim biraz büyük olduğu için 25 dakikada acılığı tam geçti. Boyutuna göre birkaç dakika daha vermek gerekebiliyor.
