Cook the lentils

A hearty, fiber-rich rice pilaf cooked with green lentils, onion and butter. Serve it with yogurt or enjoy it on its own for an easy lunch.
Boil the green lentils in plenty of water until just tender but still firm, then drain.
Melt the butter in a pot. Add the finely chopped onion and sauté until lightly golden.
Add the drained rice and cooked lentils to the onion. Sauté for a few minutes.
Add the hot water and salt. Bring to a boil, then reduce the heat and simmer until the water is absorbed. Remove from the heat and let the pilaf rest.
Soak and rinse the rice in lukewarm water before cooking to remove some of its starch and help the grains stay separate. Allergen: contains milk (butter).
