Acar is a classic Indonesian quick pickle. In this version, cucumber and carrot are lightly charred on a grill for a few minutes, then steeped in a vinegar brine. It is usually served with grilled meat and contains no nuts.

Grill the Vegetables

Cook the cucumber and carrot strips on a hot, dry grill pan for 3 minutes, turning them until lightly charred on each side.

Bring the vinegar, sugar, and salt to a boil in a small saucepan, stirring until the sugar dissolves. Remove from the heat and let cool until warm.

Toss the grilled vegetables with the shallot and red pepper flakes, then pour the warm brine over them. Let steep for at least 10 minutes before serving.

Reminder
