Pat the zander fillets dry with paper towels. Rub both sides with salt, black pepper and sweet paprika.
Brush the grill with olive oil and heat over high heat. Add the fillets skin-side down and cook for 4 minutes. Turn and cook for another 3 minutes.
Melt the butter in a small frying pan. Add the crushed garlic and capers and sauté for 1 minute. Stir in the thyme leaves and lemon juice.
Transfer the cooked fillets to a plate. Drizzle with the caper and thyme sauce, garnish with lemon zest and serve immediately.
