Dumplings and filled pastries
Gujiya are sweet Indian pastries made by filling thinly rolled dough with coconut and sugar, then sealing it into crescents. Using an air fryer instead of the traditional deep-frying method speeds up cooking.
Rub the flour and melted butter together. Gradually add water to make a firm dough. Cover and leave to rest for 15 minutes.
Lightly toast the grated coconut in a dry frying pan. Stir in the granulated sugar and cardamom, then remove from the heat and leave to cool.
Roll the dough into small, thin circles. Add 5 ml of the coconut filling to the center of each. Moisten the edges with water, fold into crescents and crimp the edges firmly to seal.
Arrange the filled pastries in the preheated air fryer basket. Cook at 180°C / 355°F for 10 minutes, until golden on top. If you do not have an air fryer, cook them for the same time in an oven preheated to 180°C / 355°F.
Moisten the edges with water before sealing, or they will open during cooking. Press firmly with your fingers to seal. Allergens: contains wheat (gluten) and dairy products.
