Gureybe are traditional Jordanian cookies that use little beyond butter and flour, topped with pistachios. Avoiding excess mixing after adding the flour is the key to keeping their characteristic crumbly texture.
Beat the room-temperature butter with the confectioners’ sugar until pale, smooth, and soft.
Add the flour gradually. Use a spatula to mix just until the dough comes together, without kneading, to make a soft dough.
Shape the dough into small balls and flatten them slightly. Press crushed pistachios onto the top of each cookie.
Arrange the cookies with space between them in the air fryer basket. Cook until the bottoms are lightly set without letting the tops get too dark.
After adding the flour, do not overmix the dough. Developing too much gluten makes the cookies tough and less crumbly. Contains wheat (gluten), dairy (butter), and tree nuts (pistachios).
