An Azerbaijani street food, these crescent-shaped pastries are made from thinly rolled unleavened dough filled with spinach, parsley and Kashar cheese. This version cooks in the air fryer with little oil and can be cut into small pieces for children's lunchboxes.
Mix the flour with the salt and olive oil, then gradually add warm water to form a soft dough.
Cover the dough and leave to rest for 10 minutes.
Mix the chopped spinach, parsley and grated Kashar cheese.
Roll the dough thinly and cut out circles. Place filling on one half of each circle, then fold into a crescent and seal. Arrange in a lightly oiled air fryer basket and cook at 190°C / 375°F for 8 minutes, turning halfway through. If you do not have an air fryer, bake for the same time in an oven preheated to 190°C / 375°F.
Roll the dough as thinly as possible; thick dough will turn hard when cooked. Press the edges firmly with your fingertips to seal, or the filling will spill out. Allergens: contains wheat (gluten) and dairy products (Kashar cheese).
