Inspired by the sweet-and-spicy sauces of Mexican cuisine, this recipe blends ripe mango with habanero chili, garlic and lemon. The concentrated sauce is meant to be served by the spoonful, so even a few drops can make a difference on a brunch plate or with a late-night snack.

How to make it?

Prepare the ingredients

Dice the mango. Wearing gloves, remove the habanero seeds and finely chop the chili. Peel the garlic.

Blend the sauce

Blend all the ingredients with the lemon juice, apple cider vinegar and salt until smooth.

Let the flavors settle

Transfer the sauce to a jar and chill it in the refrigerator for 10 minutes so the flavors can settle.

Reminder

Wear gloves when handling the habanero. Touching it with bare hands and then touching your eyes can cause intense burning. The sauce is concentrated and very spicy, so add it by the small spoonful rather than drizzling it over a dish.

Tarifte 10 dakika dinlendirmek yazıyor, tam o kadar bekledim ve tatlar gerçekten daha bütünleşmiş hissettirdi; habanero acısı ilk anda keskindi ama 10 dakika sonra mangoyla daha dengeli bir hâl aldı.

Habaneroyu eldivensiz doğradım ve tarifte uyarılmasına rağmen dikkat etmedim, ellerim saatlerce yandı; sosun tadı güzeldi ama bu tecrübe beni epey rahatsız etti, dikkatsizliğim yüzünden puanımı düşük veriyorum.

Tarif ketojenik diye tanıtılmış ama bence bir mango bütün olarak kullanılınca porsiyon başına karbonhidrat miktarı hafife alınıyor; küçük kaşıkla kullanılsa bile bu iddiayı biraz abartılı buldum.
