A Black Sea favorite made with yeasted pide dough and anchovy fillets. Toss the cleaned anchovies with onion and cornmeal, tuck them into the dough, and bake until the crust is lightly crisp. A distinctive dinner option for fish lovers.

Step by Step

How to make it?

1

Make the dough

35 min

Dissolve the yeast in the lukewarm water and let it stand for 10 minutes. Add it to the flour with the salt and knead to make a soft dough. Cover and let it rise for 35 minutes.

2

Prepare the anchovies

10 min

Toss the cleaned anchovies with the onion, parsley, Turkish red pepper flakes, and cornmeal. Season lightly with salt.

3

Shape the flatbreads

10 min

Divide the risen dough into 4 pieces and roll each into a thin pide. Fold up the edges and place the anchovy filling in the center.

4

Bake

15 min

Bake in a preheated oven until the edges of the dough are browned and the anchovies are cooked. Note: Anchovies cook quickly, so do not extend the baking time or they may dry out.

Reminder

Important: Clean the anchovies thoroughly and remove the bones; otherwise, they may be unpleasant to eat. Remove the heads and innards as well. Allergens: contains fish and wheat (gluten).
