Harire is a Mardin dessert made by boiling starch and sugar together, pouring the mixture into a tray to set, and cutting it into squares. Unlike hasude, it is not eaten by the spoon from a bowl; it is firm enough to pick up by hand. The starch ratio gives it this firm texture. If undercooked, harire sticks to the knife when cut; if overcooked, it turns rubbery.

Bring the remaining water and sugar to a boil, stirring until the sugar dissolves completely. Add the lemon juice just before removing it from the heat. Continue to the next step while the syrup is boiling; starch added to lukewarm syrup will not disperse evenly.
Pour the starch slurry into the boiling syrup in a thin stream, stirring constantly. Reduce the heat and keep stirring with a wooden spoon as it cooks. Once the mixture turns clear, continue cooking: it is ready when a line drawn across the bottom of the pot with the spoon stays open for 2 seconds. Add the walnuts and rose water during the last 2 minutes and stir.
Pour the mixture into a moistened tray, keeping it no more than two centimeters thick, and smooth the surface with a wet spatula. Harire poured too thickly will not set in the center. Once set, wet the knife, cut it into squares, and coat each piece with shredded coconut.
Let the harire set at room temperature for at least 4 hours before cutting; this time is not included in the recipe duration. Do not speed up the process in the refrigerator, or condensation will form on the surface and the powdered sugar will melt.
