This traditional Lebanese sweet drink extracts the flavor of dried carob pieces by boiling them quickly in a pressure cooker. With no added sweetener, it is a ketogenic drink suited to a late-night snack or a break between meals.
Rinse the dried carob pieces under running water.
Put the carob and water in the pressure cooker and close the lid. Once it whistles, reduce the heat to low and cook for 15 minutes.
Remove the cooker from the heat and leave for 8 minutes for the steam to escape naturally.
Strain through a fine sieve and discard the carob pieces. Stir in the lemon juice, chill and serve.
Squeeze the carob pieces well when straining the drink to extract all their flavor, or the taste will be weak.
