A thick, refreshing meze of strained yogurt blended with garlic and plenty of dill. A classic for raki tables and meze platters, this yogurt dip is also a cool accompaniment to grilled dishes.

Prepare the yogurt

Put the strained yogurt in a bowl and whisk until smooth; if using runny yogurt, strain it in cheesecloth first.

Mix the ingredients

Add the crushed garlic, finely chopped dill, walnuts if using, and salt, then mix.

Serve

Spread the meze on a serving plate, drizzle with olive oil and, if desired, Turkish red pepper flakes, then serve.

Reminder

Important: For an even thicker haydari, strain the yogurt in cheesecloth for a few hours to remove the whey; if using strained yogurt, you can skip this step. Crush the garlic before adding it. Contains milk; if you add the optional walnuts, it also contains tree nuts. Allergens: Contains milk and dairy; tree nuts are present only if walnuts are added.
