Himbasha, a sweet bread served at Ethiopian holiday tables, is made by adding cardamom, cinnamon, and saffron to yeasted dough and baking it into a golden loaf. Geometric patterns scored on top are its signature before it reaches the table.

How to make it?

Knead the Dough

Dissolve the yeast and sugar in warm milk and let it foam for 5 minutes. Add the flour, melted butter, one egg, cardamom, cinnamon, saffron, and salt. Knead into a soft dough.

Let the Dough Rise

60 min

Cover the dough with plastic wrap and let rise in a warm place for 60 minutes, until doubled in size.

Shape and Score

5 min

Shape the risen dough into a round loaf and score geometric lines on top with a knife. Brush with the remaining egg.

Bake

25 min

Bake in an oven preheated to 180°C / 355°F for 25 minutes, until the top of the loaf is golden.

Reminder

Let the dough rise for 60 minutes before baking, or the loaf will be hard and dense. Allergen: Contains wheat (gluten) and eggs.

Safranı bulamadığımda sarı gıda boyasıyla renk verebilir miyim, yoksa tat üzerinde belirgin bir fark yaratır mı? 60 dakikalık mayalanma benim mutfağımda 80 dakikaya çıktı ama sonuç yine de güzeldi.
