Hindbeh bi zeit is a traditional Jordanian mezze made by blanching wild chicory greens to remove their bitterness, then tossing them with caramelized onion and serving them with olive oil. Olive oil and fiber-rich greens make this a light yet satisfying, heart-friendly dish.

How to make it?

Blanch the chicory

Sort the chicory and wash it several times in plenty of water. To reduce its bitterness, blanch it in salted boiling water for 5 minutes, then drain.

Caramelize the onion

Cook the onions in olive oil for 10 minutes, until deep golden brown, then add the crushed garlic.

Combine and finish cooking

5 min

Drain the blanched chicory and toss it with the caramelized onion. Add the lemon juice, salt, and red pepper flakes, then sauté for 5 more minutes before serving.

Reminder

Do not sauté the chicory without blanching it first, or its bitterness will carry through the dish. Use plenty of water for blanching and drain the greens thoroughly.
