Azerbaijani hingal is made with thinly rolled dough sheets. The hand-rolled dough is boiled, layered on a plate, and topped with ground beef and onion sauce. You can freeze the uncooked dough and boil it when needed, making this recipe portable for outdoor picnics.

Knead and Roll the Dough

Knead the flour, egg, water, and salt into a firm dough. Roll it out into a thin sheet and cut into diamond shapes.

Make the Sauce

Sauté the onion in butter until golden. Add the ground beef and cook for 10 minutes, until its liquid has evaporated.

Boil the Dough

8 min

Drop the dough pieces one at a time into boiling water. Once they float to the surface, boil for 3 more minutes. Drain and arrange on a plate in layers.

Add the Sauce

Pour the beef sauce over the layers, sprinkle with sumac, and serve hot.

Reminder

Drop the dough sheets into the pot one at a time while boiling; if you add them on top of one another, they may stick together. Allergen: Contains wheat (gluten) and egg.
