Pieces of honeycomb toffee, made by foaming the syrup with baking soda, are folded into a vanilla cream base. A favorite New Zealand flavor, it keeps well in the freezer.

How to make it?

Make the honeycomb toffee

Boil the golden syrup with half the granulated sugar over medium heat without stirring for 6 minutes, until deep amber. Remove from the heat and quickly whisk in the baking soda. The mixture will foam and expand. Pour onto parchment paper and leave for 20 minutes to set completely.

Let the honeycomb toffee harden

Leave the honeycomb toffee at room temperature for 20 minutes, until hard enough to snap when touched, then break into large pieces.

Make the cream base

Heat the milk and cream on the cooktop. Whisk the egg yolks with the remaining sugar and slowly pour the hot milk over them. Return the mixture to the saucepan and cook over low heat for 8 minutes, until it coats the back of a spoon. Add the vanilla and leave to cool.

Mix and freeze

Mix the cooled cream base in the automatic mixer until it thickens. During the final 2 minutes, add the broken honeycomb toffee and mix. Then transfer it to a container and store it in the freezer.

Reminder

Do not stir the honeycomb toffee while it boils; stirring can make the sugar crystallize and prevent it becoming brittle. Take the pan off the heat as soon as you add the baking soda, as the mixture can foam up and overflow in seconds. Allergens: contains milk and eggs.

Bal şekerini kaynattığım 6 dakika boyunca karıştırma isteğine yenik düştüm, sonuç sertleşmeden önce pütürlü bir doku aldı ama yine de dondurmaya karışınca fazla fark edilmedi, lezzet gene de iyiydi.
