Pack the chopped tomatoes firmly into sterilized jars and add lemon juice to each jar. Loosely close the lids.
Important: Arrange the jars in a large pot with a cloth between them. Cover with water and, once it boils, process for about thirty minutes. This step is required for safe storage.
Remove the jars from the pot, tighten the lids, and turn them upside down to cool. If a lid has pulled inward, a vacuum has formed. Store in a cool, dark place.
Important: To store these preserves safely, thoroughly sterilize the jars and lids, then process the filled jars in a boiling-water bath. This step is required to prevent the risk of botulism. Never eat preserves if a lid is bulging or the contents smell spoiled. Store in a cool, dark place and refrigerate after opening.
