Yogurt-churned butter is made by thinning full-fat yogurt with cold water and shaking it until the butter separates. Unlike cream-based butter, it has a mild tang from the yogurt and a more lingering aroma. Do not discard the buttermilk left behind; it is the process’s second product. The key is temperature: butter will not gather from warm yogurt.

Thin the yogurt

Put refrigerator-cold yogurt in a wide bowl and gradually whisk in 1 liter of ice water. The mixture should have the consistency of ayran, a Turkish yogurt drink, and flow from a spoon in a thin stream. If it stays thick, the butter grains will not come together.

Shake the mixture

Fill a tightly sealed jar or churn no more than two-thirds full, then begin shaking at a steady pace. For the first 10 minutes, you will see only foam; that is normal. When yellowish grains appear on the surface and the sound becomes more solid, the butter is separating. Keep going until the grains are about the size of chickpeas. If the mixture warms up, refrigerate it for 10 minutes, then continue.

Gather and strain the butter

Pour the contents into a cheesecloth-lined strainer and collect the buttermilk in a separate bowl; drink it rather than discarding it. Squeeze the butter grains left in the cheesecloth together by hand to form one lump.

Wash and salt the butter

Put the lump in a wide bowl of ice water and knead it by pressing with the back of a spoon. Pour off the cloudy water and repeat with fresh ice water. Wash it three or four times, until the water runs clear; leftover buttermilk inside will make the butter turn sour within 2 days. Finally, work in the salt, wrap the butter in parchment paper, and refrigerate.

Reminder

The yogurt and the water you add should both be as cold as if they had just come out of the refrigerator. In a mixture warmer than 18°C / 65°F, the butter grains will not come together; only foam will form, and even half an hour of shaking will not make them gather.
