Hurma tatlisi is made by kneading semolina dough into small pieces shaped like dates, frying them, and soaking them in syrup. The dessert is named for its resemblance to the fruit, but it does not contain dates. It is a practical syrup-soaked treat also loved by children.
Knead all the dough ingredients together into a soft dough and let it rest for 20 minutes.
Bring the sugar and water to a boil over medium heat and cook for 5 minutes. Let cool.
Pinch off small pieces of dough and roll them into date shapes.
Fry in oil over medium heat for 8–10 minutes, until golden all over.
Dip the hot pastries in the cold syrup and let stand for 10 minutes.
Store in a sealed container at room temperature for 4 days.
